Tuesday Feb 16

As I said earlier, I was feeling better today. Still wasn't able to eat much but I thought I was good. I needed more strips for my machine that checks my blood sugar, and I thought I felt well enough to get out for a "few minutes" I don't think that was a good idea. Being really sore from all the throwing up really hit hard walking the floors at Walmart and now I'm feeling a little queezy. I still think I'm ok but I'm going to bed.

But before I do I'll let you know what I had today. Sprite 0, Sprite 0, chicken broth, Sprite 0.

I did make some oopsie rolls so Darrell & I can have sandwiches tomorrow. The recipe is
  • 3 eggs-whites and yolks seperated into seperate bowls
  • 3oz cream cheese-added to the bowl of cream cheese
  • pinch of salt-to the yolk bowl

  • 1-2 package of splenda-to yolk bowl
  • pinch of cream of tartar to the whites bowl

I prep my pans first with foil and pam spray. I spray it pretty well so that they will slide off easily. Then preheat oven to 300 degrees.

It's really important to whip your egg whites first, then you don't have to clean the beaters in between bowls. Whip the egg whites till they have firm peaks. Then mix the contents of the yolk bowl. Then fold the yolk mixture into the whites. You don't have to get it completely mixed together because you may break down the whites too much.

Then you just plop some on your pan. Most of the ones I've seen on the internet, they make into thick roll like mounds. I flatten mine out to about the size and shape of a piece of bread. I will add a picture of what mine look like. Then you just bake for about 25 minutes. You may have to adjust your time to however done you like them. I don't time mine, I just watch for how they look.


For a quick supper (and lunch for Darrell tomorrow) I just took some of the almond meal I had, mixed a little parmesan cheese and took some chicken thighs (we don't like the white meat). I dipped them in an egg wash and dredged them in the almond meal mixture and fried them like I would if it was regular flour. They were wonderful. I was still too afraid to eat much because of my sickness but what I did eat was very good. Darrell loved it.

For a side dish, I just took a can of italian cut green beans, and microwaved them with a slice of bacon for flavor. They were very good too.
